Summer Snowballs

Ingredients

  • 1 small watermelon or cantaloupe seedless
  • ½ teaspoon honey
  • 1 tablespoon vanilla yogurt
  • Toasted coconut flakes to taste
  • Mint leaves for garnish

Instructions

  1. With the melon baller, press down and turn to gently scoop out melon balls. If you don’t have a melon baller, you can try this with a deep spoon.
  2. Drizzle with honey or dollops of vanilla yogurt, or both.
  3. Sprinkle with toasted coconut flakes.
  4. Add mint leaf for garnish.

Recipe Notes

How to make toasted coconut flakes: using a nonstick frying pan, spread coconut flakes out and toast until they turn light to dark brown. No oil needed.
