Coqui the Chef has a sweet and tasty kale and strawberry salad that even the pickiest eater will enjoy. Add this refreshing side to your dinner tonight!

Sweet Kale and Strawberry Salad

Prep Time 2 minutes
Cook Time 5 minutes
Total Time 7 minutes

Ingredients

Ingredients for salad:

  • One bunch of kale Lacinato/Dinosaur or Curly Kale
  • 1 lb. strawberries hulled and quartered

Ingredients for vinaigrette:

  • 2 tbsp. extra virgin olive oil
  • 1 lemon juiced
  • 1 tbsp. agave or honey
  • tsp. of fine sea salt
  • tsp. of cracked black pepper
  • 3-4 tbsp. orange juice

Instructions

  1. Tear the kale from stem and shred into bite-size pieces
  2. Place in a bowl and add the strawberries
  3. To make the vinaigrette: In a separate bowl, whisk the lemon juice, olive oil, agave, salt, and pepper. Pour it over the salad.
  4. For an extra kick, splash squeezed orange juice over the salad
  5. Massage with your hands until soft, about 15 seconds (this makes the kale easier to eat)
