Sofrito Spaghetti Squash

  • 2 medium spaghetti squash (cut into halves, remove seeds)
  • 1 tbsp . avocado oil
  • ¼ tsp . ground nutmeg
  • 2 tsp . kosher salt
  • 1 tsp . black pepper
  • 1 cup Spanish onions (chopped)
  • 3 cloves of garlic (finely chopped)
  • 3 Roma tomatoes (chopped)
  • ¼ cup red pepper (finely chopped)
  • 1 cup unsalted chicken stock


  1. Pre-heat oven to 400 degrees
  2. Place squash on a tray and seal with foil; place in oven and set timer for 50 minutes
  3. Tip: Squash is done when a fork easily pierces the skin
  4. While squash cooks, add nutmeg, salt, pepper, onions, garlic, tomatoes, and red peppers into a bowl. Mix with a spoon and set aside.
  5. When squash is finished, remove from oven; grab a cloth to hold squash. With a fork, remove the squash meat to reveal spaghetti-like texture; this will go into a bowl.
  6. Pre-heat sauté pan, add avocado oil, add ingredients from the bowl (not the one with the squash), and cook until ingredients are translucent
  7. Add spaghetti squash to the pan and toss
  8. Add chicken stock
  9. Turn heat to low and simmer for a couple of minutes
