You can find an easy basil pesto recipe online or get a packaged alternative. Or maybe you have some leftover basil pesto. Use it in this whole wheat orzo salad by Coqui the Chef. Packed with flavor, you won’t regret making this for lunch on the go or a side dish at dinner.

Whole Wheat Orzo Salad with Basil Pesto

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • Cooked whole wheat orzo
  • 2 cups of cherry tomatoes halved
  • ½ orange pepper diced
  • 2 tbsp. red onions diced
  • 2 tbsp. of homemade basil pesto
  • Salt and pepper to taste
  • Basil leaves optional
  • Grated Parmesan cheese optional

Instructions

  1. Prepare orzo according to package and drain. Do not rinse. Let pasta cool and toss so it doesn’t stick together. Add basil pesto to pasta.
  2. Once cool, add red onions, pepper, and tomatoes and toss lightly
  3. Sprinkle Parmesan cheese and/or basil leaves for garnish
