Peas and Peaches Salsa

Ingredients

  • 2 1½- oz. cans of black-eyed peas
  • 1 large peach diced
  • 1 small red onion diced
  • 1 cup corn kernels
  • 1 small red pepper diced
  • 1 pint grape tomatoes cut in half
  • 2 tbsp. cilantro chopped
  • 2 tsp. garlic chopped
  • ¼ cup lime juice freshly squeezed
  • ½ tsp. cumin
  • ¼ tsp. chili powder
  • ½ cup olive oil
  • 1 tsp. honey

Instructions

  1. In a mixing bowl, combine black-eyed peas, peaches, onion, tomatoes, corn, red peppers, garlic, and cilantro
  2. In a separate bowl, add fresh lime juice, oil, honey, cumin, chili powder. Whisk.
  3. Add to the salsa mixture

Recipe Notes

Best served cold with tortilla chips. Serves 5. Enjoy!
