There’s nothing like a good bowl of soup! Try this healthy and savory chicken and avocado soup recipe from Chef Jeffrey Vaden. It’s perfect for leftover chicken, with ingredients you can easily find right in your kitchen.

Chicken and Avocado Soup

Ingredients

  • 1 pound cooked chicken breast diced, skinless
  • 1 spritz canola oil (spray variety)
  • 1 bunch scallion sliced thinly
  • 1 jalapeno seeded, chopped finely
  • 1–2 cloves garlic minced
  • 1 quart low-sodium chicken broth
  • 1 tsp ground cumin
  • cup cilantro leaves chopped
  • 1 each lime juiced
  • 2 each avocados pitted, peeled
  • 1 each tomato medium size, chopped
  • 1 handful tortilla chips gently crushed

Instructions

  1. Spritz the bottom of a large pot with cooking spray. Place over medium heat.
  2. Add scallions, jalapeno, and garlic. Sauté until vegetables begin to soften—about 3 minutes.
  3. Add diced chicken, cumin, and broth. Simmer for 3–4 minutes.
  4. Place flesh of 1½ avocados in a bowl. Use a fork to puree avocado with cilantro until creamy.
  5. Add a few teaspoons of the cooking liquid and continue to “cream” the avocado-cilantro mixture until smooth.
  6. Add the mixture to the cooking soup.
  7. Stir in lime juice
  8. Garnish with the remaining avocado (sliced or diced), diced tomatoes, and gently crushed tortilla chips.

Recipe Notes

Serves 4–6. Enjoy!

If you don’t have a tomato, you can just top it with a dollop of salsa and/or a dollop of low-fat sour cream.

If you have a food processor or blender, you can blend the avocado and cilantro until smooth, but a fork works just as well, with less clean-up.
