Coconut Cilantro Brown Rice Recipe

Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes

Ingredients

  • 3 cups brown rice
  • cups of water
  • 1 13½- ounce can coconut milk
  • 2 tsp. kosher salt
  • 1 tbsp. avocado oil
  • Dash of cilantro

Instructions

  1. Add brown rice, water, coconut milk, kosher salt, and avocado oil into the rice cooker or pot
  2. Stir ingredients well
  3. If rice cooker has the brown rice setting, use that to cook the rice. If you have an older rice cooker and it has only one cooking function, you will have to run the program twice (brown rice takes longer to cook)
  4. When rice is done, fluff it a bit, add cilantro, and fold it in using a spoon until evenly distributed
